Course Details
Aim
To provide food handlers with an appreciation of the fundamentals of good food hygiene practice and to equip them with the practical skills necessary to work safely with food.

- Refrigeration, chilling & cold holding of foods
- Cooking, hot holding and re-heating of foods
- Food handling
- Principles of safe food storage
- Cleaning

Course Structure
The course is of a six-hour duration.
Who Should Attend?
This course is recommended for those handling open food particularly in view of the requirements of the 2006 Food Hygiene (England) Regulations, which requires food handlers to be trained commensurate to their activity.
Assessment method
1 hour exam of 30 multiple choice questions at the end of the course. To achieve the certificate candidates must get a minimum of 20 correct answers.
Award
Successful candidates receive the Chartered Institute of Environmental Health's or the Highfield Awarding Body for Compliance's Level 2 Award in Food Safety and Catering Certificate. A food hygiene handbook will also be issued to all course members.
